One row per SKU. On hand is what's physically in storage. Reserved is soft-held during in-flight checkouts (released on payment failure / commit on success). Available is on hand minus reserved.

New SKUs in Sanity now sync here automatically (via the Sanity → inventory webhook)
at zero stock, without touching existing quantities. If a SKU is ever missing, you can
force a full resync with node scripts/seed-inventory.mjs.
